Family Dinner - Healthy Tacos
Eating healthy is hard and it sucks! We try, but we are foodies and love to try new things and often things that don't fall into the diet. We have a few staples that we lean on when we are eating healthy and wanted to share them.
Taco night! We have some variations for tacos but here is our healthy option. Not only is this really easy but it is delicious. Lettuce "tortilla" tacos. Here is the recipe:
1 package ground chicken
3 tablespoons of your favorite taco seasoning (stay tuned for ours)
Romaine lettuce leaves
1 tomato, diced
Shredded Monterey Jack and Cheddar cheese
Sour cream (optional)
Cook the ground chicken with your taco seasoning until cooked through. Place romaine lettuce in taco holders (these are our favorites). Add meat, cheese, salsa and tomatoes. Top with a dollop of sour cream. These are amazing and about 300 calories and 8 carbs!
